During the kolekole ceremony, moreover, those wearing the red and yellow pigments sit apart from the other participants (108). The features of this ceremony, and the name given to the yellow dye, suggest Polynesian influence, which is evident in many other ways in these islands and is even more pronounced a little to the east on Tikopia. Perhaps then, the yellow pigment was indeed turmeric, cooked secretly by a process similar to the Polynesian preparation of lenga. Certain affinities between the cultures of Melanesia and the Nicobar Islands also suggest that the use of reddened turmeric to powder the head in the latter area is connected with Melanesian, rather than with Hindu, practice. In the Nicobars, turmeric and the crushed shells of coconuts also form a magical preparation applied by the shaman to the foreheads of very young infants. 5. Turmeric as Condiment and Colouring Matter in Food The use of turmeric as a condiment is not recorded in Polynesia or the Melanesian islands to the west, but the rhizome of the plant is widely used in this way among those who cultivate rice in Indonesia, Southeast Asia and India. In these regions, its use is said to be indispensable in the preparation of curry, which is as much Malaysian as it is Indian (14). But that is probably on account of its distinctive aroma, rather than its colour. Its colour!fic properties are nevertheless very important in the preparation of yellow boiled rice. In India, husked rice, coloured with turmeric and con secrated by mantrams (charms), is part of the usual puja or vegetable offering of Hindu ritual, and is used in the religious ceremonies associated with births, deaths, adolescence, betrothal, marriage, and so forth. Yellow rice that has not been consecrated is used as a sort of accessory to polite social intercourse, sometimes in ways very similar to the use of betel. “It is considered good man ners to offer some to anyone to whom a ceremonious invitation is sent; the recip ient of the invitation takes a few grains and applies them to his forehead” (30). In Southeast Asia, it is used together with parched rice and white rice as something pleasing to the spirits and is in evidence on ceremonial occasions. In both regions, yellow rice, and often red, black, white, and other colours of rice, is an important adjunct to magical procedures. Whether these traits repre sent a Hindu introduction is not easy to decide, but the evidence appears to be that some of the customs involving turmeric-dyed rice have been indirectly copied from Hindu ritual, although the idea of the yellow rice as an instrument of magical power, particularly in the cultivation of the rice itself, may be older than Hindu immigration into Indonesia. In the Malay Peninsula, yellow rice is now offered at shrines by Moslem Malays. The sprinkling or scattering of tur meric-stained rice over persons and objects is a form of benediction ; in addition, they use glutinous rice which is also coloured yellow with turmeric and which is prepared for banquets of a ceremonial or religious nature.
